I know this won't be a popular answer with this group, but here goes...

Microsoft Exchange has the lion's share of enterprise email and
calendaring servers.  It supports Smartphones, blackberries, and yes
MAC.

For MAC, you can use either the full Microsoft Office for MAC or the
Entourage application:
http://www.microsoft.com/mac/products/entourage2008/ 

If you have the budget for it, I don't think you can go wrong choosing
Exchange.  It's extremely stable, has all the features you need and then
some, and there are no kludgey workarounds or processes needed.
