NFS works fine (With the exception of some dumb Mac OS X stuff that will 
hopefully be fixed) and Netatalk seems to work fine from the small 
amount I have used it.

Don't think Mac :)  This is Mac OS X which is basically BSD/Mach with a 
pretty Mac face ;)  It works basically like any BSD UNIX.
