[TriLUG] Setting up roots email address?

I'm not interested in receiving mail at this point, just changing the 
headers when mail is sent from the likes of the mail command.  To 
receive mail I would have to open up port 25/SMTP to the outside world, 
right?     That would open me up to a whole new slew of security worries?
