That's what the rsync rolling backups are for.  The ability to have a 
history of what the file system looked like, 15 mins ago, 30 mins ago, 1 
hour ago, 2 hours ago, 3 hours ago, etc - ad nauseum, and only 
increasing storage requirements by approximately 100-125%.

And of course, you can RAID and rsync your data till your heart's 
content, but none of that does away with the sensible requirement of 
off-site backups, either in tape, removable hard drive, or network 
form.  You can erase the files, sure.  And that's a valid thing to worry 
about.  But it's nothing compared to what a tornado, fire, direct 
lightning strike, or $your_natural_disaster_of_choice will do to them.  :)
