Good to know what they use, and I suppose the latest 1.5.X from CVS
would be the thing to get, but it confused me since it still had the
evolution-exchange connector as a separate module.

I understand the way they are doing their versioning, but I don't think
it is too much to ask to make it a little more obvious what code they
are referring to when they state "Get the current development snapshot
of Evolution 2.0" and "Get the Evolution 2.0 Source Code" on the
website.

You probably need to find something in the 1.5 to 1.7 range with a .9x 
on the end.  Ximian uses .9x minor minor version numbers on a 
development version (1.5, for example) to track "betas" and preview 
versions of software that will soon become a new major version (1.6, 
2.0, etc.).
