I took a quick look at the four wiki implementations you mention, and
MoinMoin claims to have a plug-in to ouput LaTex format.

After looking at all those wiki's I had to go back and visit the
original http://c2.com/cgi/wiki
Ward Cunningham used to be one of the friends who I used to see at
least once a year at OOPSLA. We had lots of very interesting, and
usually slightly inebriated, late night discussions. It's amazing how
his wiki spark has caused so many flames.
