Add ProxMox VE to your list.
They have been offering a very competitive enterprise-class virtualization product for years, and IMHO have been easier to get running & deal with than some of the offerings from the bigger vendors. Oh and it's all free.
ProxMox VE is one of those FOSS products that just doesn't get the sort of respect it deserves, kinda like when you say "monitoring" and people immediately say "Nagios" (uhhh... ever try OpenNMS?). Give it a try. If you really want to have fun, put a few ProxMox VE boxes together, and share a LUN on your SAN between them.
