It's not just for spam.

I use tricks like this with less formalized "lists", like when I give an
email address to my kids' teachers or to their girl scout leaders.

Those groups tend to send out announcements to everyone,
and the recipients "reply all". If I had a custom tag in the address
like porter+troop123 at trilug.org, then all of the replies and
discussion gets sorted into the appropriate folder.
