Git isn't exactly document management, but with hooks you can do a lot. 
Formats like *-Office documents might be benefitted by some tweaking (http://www.cybersprocket.com/2010/project-management/sdlc/versions/versioning-word-documents-in-git/).  There are graphical tools for git (http://stackoverflow.com/questions/315911/git-for-beginners-the-definitive-practical-guide#323559), but they aren't usually concerned about document workflows and sign-offs that might concern a heavier document management system.
