I am a bit confused since I did not know pidgin could also be
run as a server. I run finch 24/7 in a vm which I ssh into when I need
to post to irc/gtalk/msn/whatever. And I keep logs since it makes it
easier to grep something I missed.

If I wanted to run my own irc server, I would probably spool up a
lightweight something -- docker/etc -- and run it there but using a
higher port so it can be completely run as a dumb ass user (escalation
of privileges scares me). If doing the container dance, set a second
one to store logs and off you go.
