That's a DNS transition, not a registrar transition. It's possible to do a DNS
transfer without any downtime, but requires you be able to maintain your zone
in both the original DNS nameservers and the new DNS nameservers.

Any decent provider should be willing to work with a DNS transition and
maintain a zone in their server until it's transferred. But of course some
providers are asshats and will just cut you off as soon as they learn you want
to transfer.

That is another of choosing to transfer DNS to yourself, because you have more
control over the cutover process...
