I think CentOS and Debian would be great choices for the host OS. Both
of them have long support cycles (CentOS especially), which is ideal
for something like a hypervisor.

I wonder if an ipv6 stack would be worth considering. Some ISPs are
starting to hand them out. If the DC doesn't deliver IPv6, you might
be able to use Hurricane Electric or Tiredo. This might also be a Bad
Idea™ ☺

P.S. I think kvm is an ideal choice for this box. Since this is a
Linux users group, it'd be great to pick a technology built in to the
kernel. Plus, kvm works really well and is easy to manage with libvirt
and other available tools. AIUI, Xen is also built-in so that might be
worth considering too though I've never personally used it.
